This Touch of Modern exclusive includes both big classics and butcher cut steaks from Holy Grail’s Tajima American Wagyu and “Upper” Prime programs, all of which will allow you to create stunning date night plates for you and yours.

From Holy Grail’s “Upper” Prime program, you will receive two “Chef’s Cut” filet mignon steaks and two “Sous Vide” ribeyes that will invite you to try new cooking methods. And from its Tajima American Wagyu program, you will receive two bavette steaks, (perfect for steak frites), and two picanha steaks, which is likely to become your new favorite steak.

Upper Prime Chefs Cut Filet Mignon
Holy Grail's "Chef's Cut" Filet Mignon is a new addition to their celebrated Steakhouse Direct program and is butchered to the specifications of top steakhouse chefs. This spec calls for a bit more fat on the exterior of the filet which better holds in juices and adds richness and flavor to the lush tenderness of this classic cut.

Tajima American Wagyu Bavette
Hand selected at harvest and perfectly aged, these steaks are the pinnacle of the American-raised Wagyu world, sitting about 7-8 BMS on the Japanese marbling scale. Cut from the sirloin, the loose structure makes it ideal for marinating or as a tender stand alone. Intensely flavored and well marbled, the bavette is another great butcher cut.

"Upper" Prime Sous Vide Ribeye
If you love sous vide cooking, this is the perfect steak for you. Sous vide these to perfection at 130 degrees for 2 hours, then quickly caramelize the exterior with your technique of choice (a blow torch is handy). Hand-selected to be in the "upper" part of the marbling spectrum, these are the most tender, succulent, and juicy Black Angus steaks you can get. With only about 1,000 head available each year, these steaks are highly coveted by top steakhouses. You won't find them at your local grocery store or butcher.

Tajima American Wagyu Picanha Steak
Like foie gras, a little goes a long way here and one of these steaks is likely to satisfy two people. They feature a blend of Wagyu and Angus genetics, then periodically over-layered with Fullblood Wagyu genetics. Holy Grail's top-end program is overseen by Mr. Shogo Takeda, who feeds out the cattle a traditional proprietary Japanese Wagyu diet with high-quality Midwest ingredients for two to three times longer than commercial cattle.

For best results, place the steaks in a pan or dish and allow them to thaw over the course of 24-hours in your refrigerator. Season the steaks 3-4 hours in advance to allow the salt to penetrate deeply into the steak, regardless of cooking method.
