Aberfeldy Distillery is nestled within a lush valley in the foothills of the Central Highlands of Scotland. First planned in 1896 by the sons of John Dewar, Aberfeldy was established to provide an ingredient for Dewar's smooth blended whiskies—a single malt that would become known as the ‘Golden Dram.' The water source for the distillery is the famous Pitilie Burn, which is renowned locally for its water quality and famed for its deposits of alluvial gold. Now popular in its own right as a single malt, Aberfeldy still makes up the heart of the Dewar’s blend.
The Dewar family’s pursuit of whisky perfection continues to this day using time-honored techniques their forefathers would recognize instantly. The creation of their distinctive spirits all takes place onsite overlooking the rolling Perthshire hills, with extra long fermentation in larch washbacks and distillation in tall pot stills. These processes create the honeyed-richness for which Aberfeldy whisky is renowned.
The classic Aberfeldy 12 Year is a single malt Scotch whisky from the Highlands. While the label sadly no longer features a red squirrel, it now comes with a rather handsome black and rose-gold color palette to match the rich, malty, honeyed flavor profile and radiant golden straw color. Notes of bright green apple, honeydew, and sauvignon blanc grapes greet the nose with the slightest ethanol burn peeking through. The palate opens with watermelon jolly rancher, raspberries, and a light, refreshing bit of cucumber. It offers a very pleasant, medium length finish, with low viscosity, and firm but not abrasive oak tannin. The watermelon note in particular sticks around.
Aberfeldy 16 Year is a more thoughtful, weighty dram than the 12 year. The additional sherry casking comes through, but isn’t overbearing and works wonderfully with the fruity spirit, adding a richness and level of depth not present in the 12 year. While the bottlings seem to have a very different purpose in life, they are at once unique and complimentary. Oddly enough, the appearance of both the 12 year and 16 year is a nearly identical, radiant golden straw color. The aroma has notes of Bing cherries, slight oxidation, ripe melon, with a buttery rye toast note. The taste is reminiscent of marzipan, with a touch of coconut, dried cherries, and cherry pit spice, and some bakers chocolate. This whisky has a medium viscosity with firm tannins, light ethanol burn, and a medium length finish with toasted almond dominating.
Aberfeldy 21 Year is made exclusively from barley that is milled through the distillery's Porteus mill before being mashed and then fermented in stainless steel washbacks. Following fermentation, the whisky is distilled once through Aberfeldy's copper-pot wash stills and then again through its copper-pot spirit stills. Then, Aberfeldy 21 Year Old Single Malt is matured in a combination of casks that were previously used to mature bourbon and casks that were previously used to mature sherry. As a result, the whisky has an aroma of toasted malt, honey, fruit cake, and citrus that give way to notes of heathered smoke, caramel, creamy vanilla, and ash. The finish is long and spicy, with a touch of charcoal and stone fruits.
Aberfeldy 21 Year earned the Silver Medal at the San Francisco World Spirits Competition in 2013. In addition, it earned the Gold Medal at the International Wine & Spirits Competition in 2013 and was named the "Best Highland Single Malt Whisky" at the World Whiskies Awards in 2014.
